Easter bunny biscuit recipe

For the Our Sensory Kids #oursensoryeaster play prompt we made yummy bunny Easter biscuits. They were super easy so I’m sharing the recipe here.

Prep: set oven to 180°C and grease two baking trays then cover with greaseproof paper (Logan painted ours with butter and a silicone brush)

For the dough

  • 100g softened butter
  • 75g caster sugar (granulated works but caster is better)
  • 1 large egg yolk
  • 200g plain flour plus extra for rolling
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 2-4 tablespoons of milk

For the topping

  • 150g white chocolate
  • Edible glitter

  1. Put the butter and sugar into a bowl and beat together until light and fluffy. Beat in the egg, then sieve in the flour and spices.

  1. Add just enough milk to give a fairly soft (not sticky)dough. Bring together, using your hands, to make a soft dough. Then roll out to about 1/2cm thick and cut with your bunny cutter.
  1. Bake in the preheated oven for 10-15 minutes, or golden-brown. Put onto a wire rack to cool.

  2. While the biscuits are cooling break the chocolate up and place into a microwaveable bowl, warm the chocolate and stir at 30 second intervals until melted

  3. Put the biscuits back onto the greaseproof paper and drizzle with the chocolate

  4. Shake the edible glitter all over the chocolate
